Creamy White Bean Dip

adapted from Bon Appétit |  July 2003

Makes about 1 1/4 cups dip

Ingredients:
  • 1 cup pre-soaked drained white beans
  • 1 1/2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 large garlic clove, peeled
  • 3/4 teaspoon ground cumin
  • 1 tablespoon mint or oregano
  • 1 tablespoon dill


Preparation:
Soak dry white beans overnight, and boil for 20-30 minutes or until soft.  Drain and let beans cool.  Puree first 5 ingredients in processor until almost smooth. Season with salt and pepper. Transfer dip to small bowl. (Can be prepared 1 day ahead. Cover and refrigerate.) Mix mint/oregano and dill in small dish; sprinkle over dip.

Copy Cat Frito Lay Bean Dip

1 can (15 oz) refried beans                       
5 slices bottled jalapenos (nacho slices)
1 T brine, from the jalapenos                    
1/2 t salt                                                        
1/2 t sugar
1/4 t onion powder
1/4 t paprika
1/8 t garlic powder
1/8 t cayenne pepper


Combine all ingredients in food processor or blender and puree on high speed until smooth. Cover and chill for at least an hour before serving.

Taco Hummus

A hummus flavored with taco seasonings, great as a dip or a taco filling.

Taco Seasoning Mix (spices, herbs and salt)
15 oz Chickpeas
2 Teaspoon olive oil
1 Tablespoon lemon juice
1 clove garlic, chopped
2 Tablespoon fresh cilantro, chopped (optional)
¼ cup crumbled queso fresco cheese

1.     Drain chickpeas, reserving liquid. In blender or food processor, place chickpeas, oil, lemon juice, Garlic and remaining 1 tablespoon taco seasoning mix and cilantro (optional).
2.     Cover; blend until smooth. Add reserved chickpea liquid, 1 teaspoon at a time, until desired consistency.
3.     Spoon humus into corn or flour tortilla, add a sprinkle of cheese and serve cold or warmed.
4.     Toppings idea’s (salsa, spinach, lettuce, tomato)
5.     This dish is also nice as a dip with tortilla chips or in a quesadilla.
