To roast the legs,
place them in a single layer on racks in rimmed baking sheets and/or baking
dishes. The rims are important to keep the drippings from pouring onto the
floor of the oven. The racks are nice to help the bottom of the pieces brown,
but they’re not important. If you don’t have racks, or don’t have enough racks,
just put the chicken directly on the pan. Bake the chicken at 350 to 375 for
about 45 minutes to an hour. It should not be pink next to the bone.
