1 lb. zucchini or summer squash,
coarsely grated
1 lb. sausage
1 lb. sausage
1/2 c chopped onion
1/2 cup mayonnaise
2 large eggs, beaten
1 tsp sugar or equivalent sweetener
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cup (6 oz) shredded Cheddar cheese

Heat oven to 350°. Cook the
zucchini, sausage and onion in a large skillet or Dutch oven until the meat is
browned and the vegetables are done. In a bowl, mix all other ingredients
together. Spread mixture into 9×13 casserole dish. Bake for 30 minutes, or
until bubbly and lightly browned.
