Zucchini Spice Bread

Ingredients:
  • A little butter or oil for the pan
  • 2 cups (packed) coarsely grated zucchini
  • 6 Tablespoons melted butter
  • 1/3 cup sugar
  • 2 eggs
  • 1  1/2 teaspoon vanilla extract
  • 1 cup unbleached white flour
  • 1 cup whole wheat flour
  • 3/4 teaspoon salt
  • 2  1/2 teaspoon baking powder
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup nuts
  • 1/2 cup raisins
Directions
  1. Preheat oven to 350 degrees F. 
  2. Place zucchini in colander and drain excess water.
  3. Beat the butter, sugar, eggs, and vanilla in a large bowl.
  4. In a separate bowl, sift together dry ingredients.
  5. Add the sifted ingredients, alternately with zucchini, to the butter and egg mixture. Stir in the nuts and raisins.
  6. Spread batter into the buttered pan. Bake 50-60 minutes. Let cool for 30 minutes before enjoying!
