eggplant, peeled and diced
1
lb bulk sausage
1
small onion, chopped
1
egg, well beaten
Peel
and dice eggplant. Cook eggplant, sausage and onion in large skillet until
vegetables are done and meat is brown. Remove from heat and stir in egg. Bake
in a greased 1 quart casserole at 350 for about 25 minutes, or until bubbly.
