1 lb ground beef
1/2 medium onion, chopped (about 1-1/2 oz)
2 garlic cloves, chopped
Salt and pepper
1 c salsa with tomatoes, onions and chilis
1 t ground cumin
12 oz zucchini, in 1/4” dice (if seeds are big, remove them
before weighing), about 2 medium or 1 large or part of a really big one
Brown ground beef with chopped onion and garlic, and salt
and pepper to taste. Cook over medium heat for about 10 minutes or until meat
is well done. Add salsa and cumin. Cover and simmer for 10 minutes over low
heat. Add the zucchini, cover and cook for about 10 minutes longer. Zucchini
should be cooked but not mushy.
